Power Balls

These little balls are packed full of Omega 3 goodness, perfect for keeping your energy levels up and can make a great snack to take for morning tea/coffee groups instead of usual high-sugar options! I will warn you though they are NOT SWEET! So for those that are used to sweeter snacks they may seem a bit bitter - you can add a tablespoon of honey instead of water to help with this while you are trying to cut down your sugar load :)

Power Balls (h)


Ingredients:


2 cups walnuts, halves or pieces


1 cup sunflower seeds


1 cup coconut, shredded


2/3 cup premium cocoa powder


8-10 fresh dates, pitted and coarsely chopped


2-4 tablespoons water (or as required)


Pinch of salt


Directions:

1. Combine the walnuts, sunflower seeds, dates and coconut in the bowl of a food processor. Pulse for 30 to grind the ingredients.

2. Add the cocoa powder, salt, and water to the bowl and process until the mixture forms a paste (you may need to add a bit of extra water but do so a teaspoon at a time).

3. Roll the mixture into small-medium sized balls.Place the finished balls on a tray lined with waxed paper and chill for at least 30 minutes before eating.

Note: These will keep easily in the fridge for a few days:)
