Breakie Bliss Ball

Not all of my creations work out but this one is a winner!! Perfect to have for a small breakfast on the go or to get something into you with a 5am wake up....actually these bliss balls will make a great snack option full stop! Master 2.5 years had demolished these when he came home from daycare (that's the true seal of approval there!). Ingredients: ¼ cup of dates (about 14 dates) 1 cup of rolled oats ½ cup of desiccated coconut ¼ cup of cranberries 2 tbs of coconut oil 1 tsp of vanilla essence Extra coconut for rolling Directions: 1. Place dates into a bowl of boiling water and allow to soak for 5mins 2. Place all other ingredients into the food processor. Drain the dates and add them. 3. Pulse  a couple of times and then blitz together. Make into balls and then roll in extra coconut xxx The New Mum's Nutritionist  

Chocolate Avocado Brownie

Food is my love language and my latest creation has been made with just that, a lot of love....plus a few of my all time favourite ingredients, coconut oil, avocado, walnuts. This recipe only uses a bit of honey for some sweetness so go on, treat yourself (I licked the spoon and the bowl!). Ingredients: 2 ripe avocados 1/2 cup of dark chocolate chips 2 tbs of coconut oil 2 tbs coconut flour 1/4 cup of good quality coco powder 2 tbs of honey 1/2 tsp baking powder 1/2 tsp of baking soda 1 tsp of vanilla essence 3 eggs 1 x 70 packet of walnut pieces Directions: 1. Preheat the oven to 180° and grease a brownie tin. 2. Put the avocado into a food processor and puree (pulse a few times to ensure all lumps are removed, the smoother the better. 3. Place chocolate and coconut oil into  a microwave safe bowl and put in microwave for approximately 1-2mins until melted. Mix with a spoon a couple of times (I would do 30 seconds and then mix). 3. Indian Inspired Chicken Crock-Pot

The beauty of a crock-pot (also called a slow cooker) is that you can prepare your dinner in the morning so that when 5 pm hits, you have this beautiful warm meal ready to go. As food is cooked on low heat, the meat and vegetables retain a lot of their nutrients, plus all the juices (and goodness) from the meat flavours all the vegetables. Here is a recipe we make regularly at home as it is super tasty, super easy and of course uses ingredients traditional to Indian cuisine. Preparation time: approximately 15 minutes, cooking time 4-8 hours. Suitable for children from 6-8 months (vegetables are nice and soft and can be mashed further).
