Yummy Olive and Cheese Muffins

Another Pure & Simple creation of mine!!! If you love olives then you will looooove these delicious muffins!! Aside from their taste and amazing ability to go very well with wine and cheese....olives have incredible health benefits! Olives are anti-inflammatory so a great immune system booster, especially in times of oxidative stress and viral illness. There are also known as anti-cancerous. This is due to the abundance of phenolic antioxidants which help to neutralize the damaging effects of free radicals on the body’s cells. Olives also contain high levels of 'good fats' which play an essential role in removing cholesterol and triglycerides from the body. Like all my recipes these are so simple to make - literally put everything in a bowl and mix! Simple Coconut Flour Cookies

My latest baking experiment is soooo simple to make, and only uses a little bit of honey for sweetness. These cookies are made from coconut flour . Coconut flour is made from coconut solids which have been ground into a very fine powder. This product is increasingly being sold in health food shops and your local supermarkets. It is a great gluten-free alternative to normal flour. These little delicious morsels of goodness will only take a couple of minutes to whip up and are just perfect for cookies lovers wanting a healthier option. The addition of walnuts/sliced almonds just boosts the protein, fiber and good fat intake even higher...a little warning though - even the batter tastes good!
